Il mwbqtabbouleh o mwbgtabulè (mwbwin arabo تبولة‎mwca?; anche mwcqtaboleh o mwcgtab(b)uli) è una pietanza araba del mwcwVicino Oriente, appartenente alla mwdacucina levantina. Consiste in un'insalata a base di mwdqprezzemolocite-ref-1[1], con mwegbulgur, mwewcipollotti e mwfamenta tritati fini e con mwfqpomodoro e mwfgcetrioli a tocchettini, il tutto condito con succo di mwfwlimone e mwgaolio di oliva. Durante il pasto è normalmente servito all'inizio nell'ambito delle mwgqMeze. Alcune varianti usano la mwggsemola di grano.

Etimologia

Il termine mwhgtabbūle deriva dall'mwhwarabo levantino. Il significato di questa parola in questa lingua è quello di "leggermente speziato".

Varianti regionali

Originario delle montagne della mwigSiria e del mwiwLibanocite-ref-2[2], il tabbouleh è diventato l'insalata più diffusa nella mwkacucina mediorientalecite-ref-basanp180-3-0[3].

Nel mondo arabo ed in particolare in mwlgSiria è normalmente servito fra le mwlwMezecite-ref-wrightp251-4-0[4]cite-ref-5[5] e guarnito con della mwoalattugacite-ref-6[6].

La variante mwpglibanese utilizza più prezzemolo che bulgur, mentre nelle varianti mwpwsiriana e mwqapalestinese questo secondo elemento è presente in quantità predominante.

Esiste una variante nella mwqgcucina turca di questo piatto, conosciuta come mwqwmwrakısır, mentre un analogo piatto nella mwrqcucina armena è noto come mwrgitch. A mwrwCipro, dove il piatto è stato introdotto dai libanesi, è noto come mwsatambouli.

In mwsgLibano, la coltivazione della varietà di mwswgrano mwtasalamouni, essenzialmente nella regione di mwtqHawran, nei monti e nella mwtgvalle della Beqa' e mwtwBaalbek, era considerata nel XIX secolo come la migliore per realizzare il bulgur per la preparazione del tabboulehcite-ref-nabhanp77-7-0[7].
